This weekend I am heading north to Wisconsin in order to help celebrate and capture Tiffany and Lance’s wedding. Tiffany and Lance are close knit with their families which is something I definitely relate to. The stories of family togetherness and tradition brings back memories of my own family’s special summer traditions. More specifically when it comes to spending time with family over the holidays. Last year, as they do every year, Tiffany’s family traveled up to Door County over the Fourth of July holiday. They decided to go on a family hike along the bluffs of Lake Michigan, and everyone came along. Lance’s daughters, Tiffany’s parents, sisters, and cousins all joined in on the adventure. Everyone was in on the secret except for Tiffany. As Tiffany and Lance made their way closer to the water, Lance asked Tiffany’s sister, Breezie, to snap a picture of the two of them together. It was at this perfectly pre-planned moment that Lance dropped to one knee and asked Tiffany to be his wife. The entire family cheered for the happy couple.
Today we are going off the beaten path (hike pun intended) with our recipe this week and decided to go with a dessert! Trail Mix Cookies.
This is energy packed cookie goodness that can easily go along on many future family hiking trips. Knowing how close Tiffany is with her sisters, I decided to share a cocktail that my sisters and I enjoy while hanging out and camping during the Fourth of July holiday. This beverage is a little Malibu inspired orange juice and pineapple drink.

Trail Mix Cookies
3/4 cup chopped dried apricot
3/4 cup dried cranberries
1 cup shortening
1 cup packed brown sugar
1/2 cup honey
1 1/3 cups all purpose flour
1/2 cup wheat germ
1 tsp baking soda
1/2 tsp salt
1/3 cup flax seed
3/4 cup sunflower seeds
3/4 cup chocolate chips
Begin by chopping dried apricot and cranberries.
In large mixing bowl add shortening, brown sugar, honey and two eggs. Mix with hand mixer until well blended.
In separate bowl combine the dry ingredients: flour, wheat germ, baking soda, salt and flax seed.
Mix it all together!
Stir in by hand the remaining ingredients, granola, sunflower seeds, apricots, cranberries, chocolate chips.
Top with remaining dried fruit pieces. Bake at 375F for 10-15 minutes until golden brown.
Malibu Camping Cocktail
2 oz Malibu Rum
Fill small rocks glass with ice. Add 2 oz of Malibu Rum, 2 oz of orange juice, add splash of pineapple juice.
Drop cherry in glass to garnish.
