Double Baked Potatoes with Blue Dolphin Martini

This is one of the weddings this year that we are the most excited about because this one is personal for us.  Our niece Danielle is getting married tomorrow at the beautiful Brookfield Zoo. We are so honored to be a part of this beautiful family and also capture her and Corey’s big day.   Corey and Danielle first met in high school while attending a choir trip to Disney.   Sparks flew and they have been high school sweethearts ever since.

When Danielle was a child, Marc had asked what her favorite food was.   She replied mashed potatoes and mac and cheese.  To this day, that has pretty much not changed. So… we decided to do a spin on this childhood favorite.  The weather for tomorrow is going to be an absolutely perfect – warm and sunny.  The zoo is a unique venue and is the perfect location for Danielle and Corey to say their vows.   We are looking forward to celebrating in their love story and capturing their day.

Double Baked Potatoes

3 baked potatoes

1/2 stick salted butter

1/4 cup crumbled bacon

1/2 cup sour cream

1 cup shredded cheddar cheese

1/3 cup milk

kosher salt

2 scallions

ground black pepper

Wash potatoes, wrap in tinfoil with olive oil and salt.  Bake in 350 degree oven for 1 hour.  Allow potatoes cool slightly.  Slice in half the long ways, and spoon out insides.  Leaving the shell and a small amount of potato attached to shell for stability of your potato.  In mixing bowl mash potato insides, butter, sour cream, cheese, salt, pepper, fried onions.  Add milk slowly until the correct mashed potato consistency is met.  Spoon mixture into potato shell.   Top with cheddar cheese and bacon crumbles, bake in 350 degree oven for 10 minutes or until cheese is melted.  Garnish with chopped scallions.

 

Salmon Filets

Salt

Lemon

Place salmon filets on tinfoil baking sheet.  Drizzle with olive oil, salt, and fresh squeezed lemon juice.  Bake at 350 for 15 minutes.

 

Blue Dolphin Martin

1 oz blue curacao

1 oz Malibu Rum

1 oz vodka

splash of sprite

In shaker add blue curacao, malibu, vodka and sprite.  Shake well.  Serve in martini glass garnished with orange slice.
