When I hear that one of our couple’s favorite food is a breakfast item… I am all over it like syrup on a pancake. I love breakfast food – and to hear that Ellen and Scott enjoyed their first date a crêpe shop in Park Ridge, it gave us a reason to try to make something that we have only been able to enjoy when we go out for breakfast. This was not only fun, but it also added a bit of danger when Marc flamed the Cointreau in our kitchen. Lucky for us our kitchen still exists, and we are getting ready to celebrate Ellen and Scott’s upcoming wedding this weekend.

Crepe Batter

1 c sifted flour

3/4 tsp salt

2 eggs, beaten

1 1/4 c milk

2 oranges (zest and juice)

2 tbs butter melted

Zest 1 orange, set aside (approx 1 tbs zest).     Slice orange and set aside.  Whisk 2 eggs.  In bowl combine flour and salt.   Slowly mix in eggs, milk, melted butter, orange zest and whisk. Batter should be of thin consistency.

Warm large pan with melted butter.  Ladle crepe batter into pan, once side becomes golden brown, flip.  Roll and Set aside.  You can place in oven to keep warm as you make the sauce.

 

Crepe Suzette Sauce

1/3 c sugar

3 oz Cointreau

Heat up sugar in pan until it caramelizes.  Add Cointreau.  Avoid burning down your house, this is dangerous.   After alcohol has burned off stir in orange juice.  Cook until it becomes golden orange, and slightly thickens.  Add orange slices to warm.    Pour over crepes and serve with fresh strawberries and mint.

 

Watermelon Mojito Mocktail

3 cups chopped watermelon

juice of 2 limes

1.5 tsp sugar

mint leaves

ginger ale

club soda

In blender, blend watermelon, lime juice and 1 tsp sugar until well blended.   In the bottom of class muddle 1/2 tsp sugar with mint leaves.  Add watermelon puree filling about half full.  Add club soda, top with a splash of ginger ale.  Garnish with mint spring and diced watermelon.
