Chicken Piccata with Mango Prosecco Bellinis

Lauren & Conner

Tomorrow is going to be a beautiful day.  Not only is the weather going to be absolutely stellar but tomorrow is the day Lauren & Conner tie the knot.   The path of these two first crossed in Freshman high school history class.  Although timing wasn’t quite right time for sparks to fly. It wasn’t until after college these two began dating.   It was the perfect match and these two have been two peas in a pod ever since.   After having dated for 3 years, Conner had the perfect plan to propose to Lauren.  Since they both love Italian he had arrange dinner at a nice restaurant.   Although Lauren had a feeling a proposal might be in the works, dinner came and went without much of a surprise.    It wasn’t until Lauren and Conner returned home that Lauren realized what Conner had planned.   Their two rescue dogs had little bandanas around their neck that said “say yes”.   Everything, including roses and champagne were strategically placed why Conners parent while they were at dinner.    Lauren DID say yes and tomorrow is their big day.

Lauren and Conner are such big fans of Italian food much like I, so this was perfect opportunity to showcase one of my all time favorite Italian recipes, chicken piccata.  Paired with a sweet mango bellini, this meal was delicious.

Chicken Piccata 

2 chicken breasts

2 eggs

2 cups flour

1 garlic clove

1/3 cup chopped Italian parsley

3 tbsp butter

2 tbsp olive oil

1/4 cup lemon juice

2 tbsp capers

1 chopped garlic clove

1/2 cup dry white wine

Begin by flatting 2 chicken breasts by wrapping chicken in plastic wrap and pounding.  Dredge flattened chicken in egg wash then flour and set aside.   In a hot pan melt 2 tbsp butter and 3 tbsp olive oil.   Add chicken to hot pan and cook 3 minutes per side.   Remove chicken.  Into pan add lemon juice, capers, garlic and wine.  Once simmering add chicken back in and simmer for an additional 10 minutes.  Remove chicken from sauce.   Add 1 tbsp butter and allow sauce to thicken.   Serve over pasta, garnish plate with Italian parsley, lemon and parmesan.

 

Mango Prosecco Bellini

1 oz chilled vodka

prosecco

mango sorbet

mint spring

lemon twist

In champagne glass add 1 oz chilled vodka and top with prosecco.   Add one small scoop of mango sorbet.  Serve immediately garnished with a mint sprig and a lemon twist.
