Bruschetta Chicken Sliders with Tiramisu Martini

You never expect to meet the love of your life in middle school, but that is exactly what happened when Alyssa and Michael were entering their teenage years.   It was after a few musicals when these two became friends.  Although the time has passed quickly since their younger days of middle school crushes, it has now has bloomed a beautiful relationship of love.  Growing up together, and sharing in the wonderful world of parenthood with their young daughter Rosalie.

One of their favorite meals shared was when they were just hanging out one of our favorite joints Bar Louie, enjoying some yummy bruschetta.   Conversation flowed and they had a great time in eachother company.  It are little perfect dates like this that Marc and I love and can easily relate to.   So we were so excited to make our take on Bruschetta and make it into more of a meal with Chicken Bruschetta Sliders.   These were super delicious so I hope you enjoy!

Bruschetta Chicken Sliders

2 roma tomatoes

1/2 red oinion

1 clove fresh garlic

kosher salt

5 fresh basil leaves

black pepper

2 tbs olive oil

1 tbs white balsamic vinegar

1 lb ground chicken

1 tbs Penszy’s Italian Seasoning

1/4 cup panko bread crumbs

French Bread

Chop Tomatoes, Red Onion and Fresh Garlic.   Mix in bowl with olive oil, sat, pepper, basil leaves, and white balsamic vinegar.   Let marinate in refrigerator for 30 minutes.    While bruschetta mix is resting create chicken sliders.  Take 1 lb ground chicken mix with Italian Seasoning,  kosher salt, and panko bread crumbs.  Form into patties.   Cook chicken sliders in hot skillet, approximately 3 minutes each side.   Make Crostini by slicing french bread into 1/2 inch slices.   Top with olive oil and salt.  Cook in 350 degree oven for 8 minutes.  To plate top crostini with fresh greens, chicken patty, bruchettta mixture.   Garnish with fresh slices of parmesan reggiano cheese.

Tiramisu Martini

2 parts Rum Chata

2 parts vanilla vodka

1 part creme de cacao

In shaker of ice mix Rum Chata, vanilla vodka, and creme de cacao.  Serve in martini glass.  Garnish with chocolate syrup, whipped cream, and cocoa powder.
